Hay que fundir el chocolate al ba�o mar�a y con manteca. Las virutas de chocolate son ideales para las tartas de chocolate y dulce de leche. Generalmente son de chocolate amargo.

� Mermeladas. Cobertura m�s com�n para tartas de frutas. Un truco para que el sabor se integre m�s con la fruta consiste en cocinar la mermelada agregando az�car (y brandy si es para adultos o jumo de lim�n si van a comer ni�os) y colarla parea que no lleve pulpa.

� Az�car glass. Es el ideal para algunos tipos de tartas como la tarta de almendras, ciertos bizcochos o bizcochuelos. El az�car glass puede enriquecerse o sustituirse por cacao en polvo o canela y algunos tipos de tartas lo agradecen.

� Decoraciones originales y creativas. Desde gratinar el merengue para tartaletas de crema o frutas (tan sencillo como espolvorear el merengue con azucar glass y meterlo unos instantes en el grill del horno; o hacer una cobertura de mazap�n, si se prefiere.
